• 2 lbs lean ground turkey
  • 1/3 cup applesauce
  • 3 tablespoons hoisin sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon toasted sesame oil , plus additional
  • toasted sesame oil , for the pan
  • 1 tablespoon finely minced gingerroot
  • 2 -3 medium garlic cloves , finely minced
  • 1 pinch salt & freshly ground black pepper
  • 3 scallions , white and light green parts, finely chopped
  • 1 In a large bowl, combine the turkey, applesauce, hoisin and soy sauces, sesame oil, ginger, garlic, scallions and salt and pepper to taste. Form the meat into 6 patties. (May be covered and refrigerated for up to 24 hours.).
  • 2 Lightly brush a grill pan or skillet with the sesame oil and place over medium-high heat. Add the patties and fry until golden, about 4 minutes. Turn and cook until the other side is golden and the turkey is cooked through, about 5 minutes. Transfer to a bun. Serve immediately.
