• 2 baby cos lettuce
  • 250ml (1 cup) good-quality mayonnaise
  • 2 garlic cloves, crushed
  • 40ml (2 tbs) lemon juice
  • 1 tsp grated lemon rind
  • Remove and discard outer lettuce leaves. Wash and dry the lettuce and place in a clip-lock jar.
  • For the garlic mayonnaise, combine remaining ingredients, season, then pour into a small clip-lock jar.
  • To serve, dip cos leaves into the mayonnaise.
