• 24 fresh dates
  • 130g (3/4 cup) smoked almond kernels
  • 60g butter, at room temperature
  • 6 thin slices rindless bacon
  • Balsamic glaze (optional), to serve
  • Preheat oven to 180°C. Use a small sharp knife to cut a slit in each date. Remove and discard the stone.
  • Process the almonds in a food processor until coarsely chopped. Add the butter and process until well combined. Divide the mixture among the date cavities.
  • Cut each slice of bacon crossways into 4 pieces. Wrap a piece of bacon around each date. Use a toothpick to secure.
  • Place on a baking tray. Bake for 10-15 minutes or until heated through. Drizzle over a little balsamic glaze, if desired.
