• 100g unsalted butter
  • 80g caster sugar
  • 80g brown sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 80g plain flour
  • 1/2 tsp baking powder
  • 80ml (1/3 cup) milk
  • 50g chopped walnuts, lightly roasted
  • 100g good-quality dark chocolate, chopped
  • 150g rolled oats
  • 20g pitted dates, chopped
  • Preheat oven to 190°C, line two large baking trays with non-stick baking paper.
  • Cream butter and sugars until pale. Add the egg and vanilla and stir to combine. Sift in flour, baking powder and a pinch of salt. Add milk, then stir in nuts, chocolate, oats and dates.
  • Form into 12 balls, then, using damp hands, form into 12 starfish shapes. Place on trays and bake for 12-15 minutes. Remove and set aside to cool.
