• 1 quantity Basic biscuit mix (see related recipe)
  • 1/2 cup strawberry jam
  • Preheat oven to 180°C/160°C fan-forced. Line 3 baking trays with baking paper.
  • Make Basic biscuit mix. Roll biscuit dough out between 2 sheets baking paper until 4mm thick. Using a 7cm star-shaped cutter, cut stars from dough. Place stars on trays. Re-roll remaining dough and repeat. Refrigerate biscuits until firm. Using a 3.5cm star-shaped cutter, cut small stars from the centre of half the stars.
  • Bake for 8 to 10 minutes or until light golden. Stand on trays for 5 minutes. Transfer to a wire rack to cool. Spread large stars with jam. Sandwich with cut- out stars. Serve.
