• 1/2 lb boneless skinless chicken breast , cooked and shredded
  • 1 (5 ounce) can albacore tuna in water , drained (or your preferred type)
  • 1/4 cup red pepper , diced
  • 1/2 cup celery , diced
  • 1/4 cup pecans , chopped
  • 6 dried apricots
  • 1/4 teaspoon sea salt (or regular table salt)
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon ground mustard
  • 1/8 teaspoon rosemary , crushed
  • 1 teaspoon lemon juice
  • 1/2 teaspoon apple cider vinegar
  • 3/4 cup mayonnaise (or more to taste)
  • 1 Combine all ingredients in medium sized bowl.
  • 2 Use as a sandwich filler in croissants, rolls, baguettes, tortillas, white or wheat bread. Or simply wrap in a large lettuce leaf.
